For the best results, always use cuts of meat thick enough to touch both the top and bottom plates when the grill is closed.

  • Beef – Recommended cuts of beef are Sirloin(New York), Rump, Rib Eye, and Fillet.
  • Lamb – Recommended cuts of lamb are Trim Lamb Leg Steak, Fillet, Eye of Loin, Cutlets, and Diced Lamb.
  • Pork – Recommended cuts of pork are Butterfly Loin Steak, Spare Ribs, Leg Steak, Fillet, and Diced Pork

Tips

  • For tougher cuts such as beef blade, topside steak or lamb forequarter or neck chops it is recommended that these be marinated for a few hours or over night in a marinade with wine or vinegar in it to assist with breaking down the connective tissues.
  • It is not recommended to cook items with thick bones such as T-Bone steaks.
  • If using a marinade or using pre-marinated meats, drain the excess marinade off and dab with a paper towel before placing on the grill. Some marinades contain high sugar levels which can scorch on the grill plate when cooked.
  • Do not overcook meat; pork is better served pink and juicy.
  • Do not pierce meat with a fork or cut meat while cooking, this allows the juices to escape and creates a tougher piece of meat when cooking is complete.
  • When removing fish pieces, use a flat, heat-resistant, non-metallic spatula to support the food.
  • Parboiling sausage can alleviate the need to pierce sausage before cooking.
